All the extraction settings for both of the shots were EXACTLY the same.
Even letting the beans age a little after opening makes a massive difference in espresso shot quality. Also, notice that even though both the shots start at exactly the same time, the fresh beans soak in more water during pre-infusion and drip slowly in the beginning compared to the relatively stale beans.

The beans on the left side were roasted on Nov 8, 2023.
Tasted very fruity, and I enjoyed it very much.

The Coffee Beans on the right were roasted on Oct 17, 2023.
It didn’t taste very pleasant, and I wouldn’t say I liked it very much.
