Specialized beverage equipment company Scanomat recently introduced a bevy of new features to its flagship under-counter-installed, super-automatic coffee machine, the TopBrewer.

The Danish company unveiled the new generation of the TopBrewer at the World of Coffee event in Copenhagen in June, showing off a new grinding solution, a single-dose hopper system, new water flow systems and a new milk foaming system.

The TopBrewer remains squarely targeted at the office and hospitality segments, where users seek relatively high-quality coffee at the push of a button while also not being confronted with bulky countertop machinery.

The TopBrewer’s new Gen2 Pro grinder was designed in-house for low retention and maximum particle uniformity. It works in tandem with the TopBrewer’s new single-dose bean hopper system called Prism, which consists of a modular design for displaying six doses side-by-side atop the counter.

The Gen2 Pro grinder allows operators access to the 64-millimeter flat burrs for cleaning or burr swapping, with the latter taking no more than 30 minutes, according to the company. The grinder accommodates front and blind-mounted burrs from a wide range of manufacturers, depending on the needs of users.

“The TopBrewer can brew drip-style coffee,” Scanomat Executive Sebastian Vibe-Petersen told Daily Coffee News. “Because it is an under-counter machine that utilizes pressure and does not use a paper filter, the resulting cup profile is more akin to an AeroPress or even a French Press than other filter coffee styles. Our pressure and flow technology ensures a consistent 8 milliliters per second flow rate for these types of coffees.”

The new TopBrewer’s FlowControl technology monitors overflow and actively adjusts water pressure depending on grind settings and brew method.

Prior to hitting the coffee, water also flows through what the company calls its FlowMatrix filter, a four-layer shower screen system that disperses and distributes water evenly, reducing channeling and additionally managing flow. Layers within the FlowMatrix include a Matrix Filter as well as a custom final screen designed for Scanomat by IMS.

The TopBrewer maintains a standard milk system that delivers foamed milk into the extracted coffee for various beverage types. Yet a new variant of the machine also includes a feature called FusionMilk, an updated foamer that delivers texturized, latte-art-capable milk from a separate spout.

Scanomat was founded in Denmark in 1961 by Preben Vibe-Petersen who ran the company alongside his son, Kim Vibe-Petersen. Kim still owns and runs alongside his own sons, Sebastian and Frederik Vibe-Petersen.

The TopBrewer was first unveiled in 2011 and launched in 2012. Like the company, the machine is now in its third generation. In addition to coffee and milk, the system also delivers sparkling and still cold and hot water at prescribed temperatures and volumes.

“The TopBrewer offers flexibility in beverage preparation,” Sebastian Vibe-Petersen said. “We are excited to get some feedback from industry specialists and enthusiasts. We hope to create some excitement and that this will generate some traction. It is still in the early days.”
