Build-Outs Of Coffee: Triptych Coffee Co. In Denton, TX

Denton, Texas is an underrated little city. A college town, a bastion of relaxed north Texas style and culture, home to a bunch of awesome restaurants and historic buildings, the epically massive Recycled Books, a gorgeous downtown square, and a fun barroom nightlife and live music scene. Triptych Coffee is new to Denton, and they’re mobile, but mostly call a lovely little plant store and tattoo studio home. Sounds about right! This is a spot after our own hearts.

For those who aren’t familiar, will you tell us about your company?

We’re a small, mobile cafe that’s LGBTQIA+- and woman-owned and operated. We’re open six days a week at a local plant/tattoo store, but we also do catering. We strive to make our menu and operation as sustainable and high-quality as possible, while also bolstering the local economy and connecting with other small businesses.

Can you tell us a bit about the new space?

True Leaf Studio is a plant store and tattoo studio and the owners, Taylor and Michael, are kind enough to let us use them as our home base. We park inside or outside depending on the weather, and because everything’s on wheels, we can just roll in or out.

What’s your approach to coffee?

We carefully select what roasters we have on espresso and retail based on their relationships with their farmers, their dedication to sustainability, and menu. We rotate roasters every four to five months, and are currently serving Traffic Coffee Roasters. We aim to bring in options from around the world to give our town more opportunity to try new things.

Any machines, coffees, special equipment lined up?

We’re currently working with a La Marzocco Linea Mini and a Mahlkönig e65s GBW. We started with a Mazzer Super Jolly grinder, but after winning second in a local Shark Tank-styled competition, we were able to upgrade to that Mahlkönig.

How is your project considering sustainability?

Our goal is to eliminate our use of single-use plastics. We currently use commercially compostable disposable cups, but our goal is to shift into glass to-go containers. Making mobile sustainable is a difficult but very rewarding goal.

What’s your hopeful target opening date/month?

We opened full time at the end of March 2024.
