We always love seeing a familiar face pop up here on Build Outs, and were thrilled to see this new opening from Spiller Park in Atlanta, a coffee co we’ve been covering for the better part of a decade. Now with four cafes across Atlanta, the new Spiller Park opened just a bit earlier this year, and they’re located in a beautiful old building in the nationally register protected Hotel Row district in downtown. Put this one high up on our can’t-wait-to-visit list.

For those who aren’t familiar, will you tell us about your company?
The shops are the brainchild of coffee industry veteran Dale Donchey, who launched the first Spiller Park Coffee at Ponce City Market in 2015. A history buff and ardent baseball fan, Donchey named the shop after Rell J. Spiller, the owner of the defunct minor league baseball team, the Atlanta Crackers. Spiller Park Coffee, now four locations, offers a full range of espresso drinks, drip coffee, pour-overs, and the famous Shake Shake, alongside matcha and a variety of baked goods. Customers can also enjoy our inhalable toast offerings, including avocado toast, cinnamon sugar toast, and hot cereal.
Can you tell us a bit about the new space?
Spiller Park Coffee opened its doors in Historic Hotel Row on April 15, 2024. Nestled on Mitchell Street, this location has been slightly refurbished, preserving much of its century-old charm with white, teal, and maroon penny tiles forming geometric patterns and flowers on the floor.
What’s your approach to coffee?
The approach SPC takes is to serve great coffees both locally roasted as well as Intelligentsia, made-to-order food, some in-house baked items, and provide a safe space to those of downtown that have been without for too long. It’s small but big in love. A sweet place if you will.
Any machines, coffees, special equipment lined up?

How is your project considering sustainability?
We think of sustainability as more than simply environmental. We like to ask, how are we sustaining the careers and lives of our team? How are we making responsible choices for the neighborhoods we serve? With that in mind, here are a few:
We source GA-local dairy and pecan milkWe source local produce for our menu whenever possibleWe provide 50% employer-paid dental, vision, and health insuranceOur full-time baristas enjoy two weeks PTO annually
We offer tipped minimums, to guarantee wages for our staff regardless of how busy the shop may be that day.
We work with local designers and craftspeople to curate our space, and most of our decorative and aesthetic purchases in our cafe have been thrifted.
What’s your hopeful target opening date/month?
We opened Mitchell Street on April 15, 2024!
