Brambati pursuing AI roasting applications

 Brambati SpA is celebrating its 80th anniversary in 2025, but it is not letting its long history get in the way of using emerging technologies to foster innovation. 

The company says it is currently working on a project-based application of artificial intelligence (AI) to analyse data collected from its plant database and coffee roasters to gain efficiencies in the roasting process. 

From this data, Brambati says the AI program will then generate suggestions on how to improve different aspects of the coffee roasting process through means including roaster productivity, energy consumption, and predictive maintenance. 

This initial project, however, is not the only AI application Brambati says it is working on. It is also looking to implement new roaster software to improve cup taste consistency in the roasted coffee’s flavour profile as a further step to improving its capabilities. 

The aim is to do this through the repeatability of technological parameters around colour, moisture, roasted bean development, and weight loss. All the data input to the AI is analysed to create reports on how to boost repeatability of key technological parameters to ensure as consistent a roast as possible.

Brambati hopes the continuous learning of the AI model means the system will constantly evolve to guarantee continuous improvement over time. 

The company says the AI technology will produce a range of data to improve cup taste consistency in its roasted coffee flavour profile. 

“The use of the AI-based software will minimise, if not eliminate, the fine tunings necessary during the change of recipes, coffee quality, and seasons, therefore reducing the time needed to make those adjustments,” Brambati says. 

“The AI based software will be fed by historical and real-time data, which will then be analysed to provide advice on how to improve roaster performance in terms of productivity, reduction of energy consumption, maintenance, and repeatability of key technological parameters.  

“The new AI system will also be working through a SIM-based dedicated remote connection to avoid issues with the safety of data exchanged between the customer database and Brambati HQ.”
