☕ About the Recipe:
Bulletproof Coffee, also known as Butter Coffee, is a creamy, high-fat coffee drink designed to provide steady energy, a smooth mouthfeel, and a rich, full-bodied taste. The combination of espresso, butter, and hot water creates a foamy, satisfying drink often favored by those following a keto or low-carb diet.
For this recipe, we extracted espresso either directly into the pitcher or into a small glass and transferred it later. The espresso is then combined with 50 grams of butter and 50 grams of hot water in the milk pitcher, lightly steamed to help the butter emulsify, and finally poured into a 180 ml serving glass.
A Level 1 preparation is perfect for anyone who just got their Breville/Sage Barista Express and wants to learn the basics. It’s also a great guide to share with someone who’s still struggling to get their technique right. ☕ Ingredients:
Coffee beans: 17–18 grams (freshly roasted)
Butter: 50 grams (about 2 tablespoons)
Hot water: 50 grams
⚙️ Tools:
Breville/Sage Barista Express espresso machine (built-in grinder included)
Tamper (included with machine)
Portafilter
Funnel
Milk pitcher (for steaming the mixture)
Small glass (optional, if extracting separately)
Serving glass (180 ml)

1️⃣ Prepare the Butter & Water
In a milk pitcher, add 50 grams of butter and 50 grams of hot water.
2️⃣ Prepare the Espresso
Grind 17–18 grams of coffee on a fine setting (around 5–6). Level the coffee grounds by gently tapping the portafilter horizontally with your hand. Tamp evenly with firm pressure. Lock the portafilter into the group head.
Press the double shot button and extract 35–40 grams of espresso either:
• Directly into the pitcher (if it fits under the group head)
• Into a small glass and then transfer it into the pitcher
• Into a 180 ml serving glass and transfer back into the pitcher for steaming
3️⃣ Steam the Bulletproof Coffee
Submerge the steam wand just below the surface and steam lightly, introducing a bit of air to create a creamy texture.
Continue steaming until the butter is mostly melted and emulsified. Avoid overheating to prevent separation.
4️⃣ Serve & Enjoy
Pour the steamed mixture from the pitcher into a 180 ml glass.

5️⃣ Clean Up
Knock out used coffee grounds. Rinse the portafilter and wipe the group head clean. Wipe and purge the steam wand to remove any residue.
