Latte ratios are a bit different depending on each coffee shop.
It used to be a single shot of espresso plus the silky steamed milk.
Nowadays, many coffee shops are going with double espresso shots or a ristretto.

Ristretto is basically a double espresso but with less water, which means with a smaller brewing ratio. Around 1/1 or 1/1.5 ratios.

We personally love to make our latte with a ristretto.
We use 18g in, 25g out, within 30 to 35 seconds.

Ristretto will give you thicker texture and more contrast colors for a better latte art.
In our experience, it even makes the latte taste better when compared to a normal double espresso.
