We’re finishing off a memorable first week here at Build-Outs with a visit to Baltimore, Maryland’s new Sacre Sucre. As a city famous for cakes, it’s only fitting that this bakery and pastry shop has gone all-out on the coffee service. Let’s take a closer look!

For those who aren’t familiar, will you tell us about your company?
We are a pastry shop/bakery concept in Baltimore City, that has crossed into the coffee and tea world to ensure our customers get the best of both worlds when they visit us.
Can you tell us a bit about the new space?
Our new space is about five times larger than our original store. It is located in the historic neighborhood of Fells Point, Baltimore. Having a larger space allows us to have more dining seating and explore other areas that we haven’t had the change to such as breakfast and lunch options and bread.
What’s your approach to coffee?
Our approach to coffee is very similar as to a traditional wine menu. We want our customers to come in and try something different every time. We strive to feature coffees from multiple countries to try and communicate the importance of looking at coffee as a food product not simply as “coffee.”
We usually work with a couple of roasters both domestic and international that are roasting incredible coffees in collaboration with farmers.
On espresso we will rotate various blends. We also feature a single-origin espresso.
On batch brew, we normally feature an African coffee as our hot coffee, and a South American coffee as our iced option.
As far as pour-overs, we like to have a variety selection of different varieties and fermentation coffees.On occasion, we will have the same coffee from the same farmer processed differently, featured on our menu for that “intrigued” customer.
Any machines, coffees, special equipment lined up?
We work with a Kees van Der Westen Spirit Duette for our bulk of drinks. We also have a Speedster for our more intricate drinks such as single-origin espressos.
How is your project considering sustainability?
We strive to work with local farms as much as possible to supply our business with fresh produce and fruit. We have also come up with a “mystery bag” concept in which we offer discounted day-old baked goods, in an effort to reduce our waste.
What’s your hopeful target opening date/month?
We are open as of January 2024
Are you working with craftspeople, architects, and/or creatives that you’d like to mention?
Yes! For this project we worked with local furniture makers: Monkey in the Metal, GoodWood Design, and Crump & Kwash. All amazing people making great furniture in Baltimore City.
