With milky coffee drinks such as a latte, cappuccino or a flat white, the first thing that hits your taste buds is not only the sweetness and creaminess of the milk, but also its smooth and velvety texture. This is why we have created a five-step guide on how to create perfect textured milk, just like a barista.

Directions:
1. Begin by filling the jug with fresh, cold milk to just below the spout position. Before you begin texturing, we recommend that you purge the steam wand by positioning the steam wand over the drip tray and turn the ‘Steam dial’. Wait until the steam is at full strength and then turn the dial to ‘Standby’.
2. Within eight seconds of purging the steam wand, lift the steam wand to insert into the milk jug; you are looking to place it 1-2cm below the surface of the milk.
3. Move the dial to the ‘Steam’ position and keep the tip of the wand just under the surface of the milk until the milk is spinning clockwise, producing a whirlpool effect.
4. With the milk spinning, slowly lower the jug. This will bring the steam tip to the surface of the milk and start to introduce air into the milk. You may have to gently break the surface of the milk with the tip of the steam wand to get the milk spinning fast enough.
5. Keep the tip at or slightly below the surface of the milk, whilst continuing to maintain the whirlpool. Texture the milk until sufficient volume is obtained. The milk is at the correct temperature of 60 to 65 degrees Celsius when the jug is hot to touch.
6. Once the desired temperature is reached, move the ‘Steam dial’ to ‘Standby’ before taking the wand out of the jug. Set the jug to one side and wipe the wand and tip with a damp cloth. Position the steam wand above the drip tray and turn the ‘Steam dial’ to the steam position. This will clear any remaining milk inside the wand.
7. Tap the jug on the bench to collapse any bubbles.

Remember that different brands of milk and milk alternatives will texture differently, so you may need to adjust your texture levels accordingly.
